Description

The Bellevue Club is seeking a dedicated and experienced Executive Chef to join our team. This is a full-time, working position. You will work in the restaurant kitchens and oversee and manage all food quality and consistency standards set by the Food and Beverage Director.

SUMMARY Oversees all kitchen operations at the Bellevue Club. Plans, directs, and coordinates the preparation and presentation of food for Polaris, Splash, Catering services, social functions, employee lounge, Luna Express and room service.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

  • Prepares the annual budget and business plan for all food operations and monitors progress throughout the year.
  • Evaluates various business statistics as they relate to the food operations and adjusts the business plan as necessary to ensure that financial and organizational goals are met.
  • Reviews and analyzes labor cost reports to monitor and control labor costs. Reviews and approves all employee time reports for the kitchen.
  • Develops, implements and maintains facility cleanliness and maintenance standards for all kitchen areas.
  • Ensures compliance with Washington State Health Department policies and procedures.
  • Oversees the development of the various restaurant and catering menus in conjunction with the General Manager and the Catering Director.
  • Plans and develops menus for various promotional and special events in conjunction with various Club department heads.
  • Supervises the Sous Chefs and Banquet Chefs in the planning, preparation, and presentation of all menu items.
  • Inspects and tastes food to ensure a consistently high-quality product and overall quality presentation.
  • Utilizes feedback provided by the General Manager and Club President regarding various menus and food items to continually improve the quality of food service and presentation.
  • Orders, receives, inspects and inventories all kitchen food supplies.
  • Oversees and maintains food cost analysis, purchasing guides and ordering par. Purchases and maintains all kitchen equipment and utensils.
  • Recruits, interviews and hires all kitchen personnel in conjunction with other kitchen supervisors and the Human Resources department.
  • Effectively schedules staff to operate the main kitchen and Splash kitchen seven days a week. Ensures accountability of Sous Chefs and Banquet Chef for on-going menu development, food cost control and food quality control.
  • Ensures that all kitchen staff maintains current skills to effectively prepare and present food items. Provides training to continually improve these skills in order to consistently update and improve the food product quality.
  • Supervises and evaluates all kitchen staff in conjunction with other kitchen supervisors. Provides guidance to employees concerning substandard performance, including the development of performance improvement plans and when necessary, termination counseling.
  • Maintains a current knowledge of regional and national trends in the food and beverage industry to ensure the food product leads the industry in quality and presentation.
