Chevy Chase Club is a distinctive social institution that, since 1892, has provided members, their families and guests with recreation and refuge from the stresses of daily life in the environs of our nation's capital. Chevy Chase Club is a 126 year old, member-owned club with 2,400 member families. Total Club Revenue $29,000,000. Facilities include clubhouse including member dining and private function rooms, casual restaurant, an 18-hole golf course, outdoor and indoor tennis courts; paddle tennis courts, fitness center, swimming pools, duckpin bowling lanes, ice rink, and overnight guest rooms and nature trail. Chevy Chase Club is a traditional full service private country club open 365 days a year.


 
Description

Executive Sous Chef

Chevy Chase Club, a 130 year old traditional full service country club located just outside of Washington, DC seeks a culinary leader committed to continuous improvement, staff development and high standards of culinary excellence. Interested candidates should possess 10 or more years of experience and have worked within a private club, resort or luxury hotel environment. Qualified individuals will have experience in restaurant operations and event production, and must be effective at delegating, multi-tasking and effectively communicating with a diverse workforce and sophisticated clientele. This role is best described as a hands on leadership position with administrative responsibilities.

The Club does $7M in F and B revenue, with ala carte sales comprising the majority. The Club operates multiple seasonal and year round dining outlets as well as hosting a full calendar of private events and club functions.

Compensation is competitive and will be comparable to one’s experience. This individual will typically work a 5 day week and is eligible for the Club’s full-time key management benefits package. The Club will interview selected candidates in January 2023.

Specific duties include but are not limited to:

  • Implement strategies for the kitchen that support the achievement of the club's goals.
  • Create an environment for employees aligned with the company culture through constant communication and reinforcement. Communicate and reinforce the service vision for the clubs to managers and employees.
  • Create an environment at the club designed to stimulate all senses through personal services, amenities, and experiences provided by employees

  • Keep current on the pulse of the guests, constantly seeking opportunities to follow up on their experience.
  • Provide employees with the tools and environment they need to deliver the company experience.
  • Develop and implement strategies and practices that support employee engagement.
  • Seek out fresh food sources; monitor all produce and meat for freshness.
  • Suggest daily specials that incorporate seasonal or special order ingredients.
  • Maintain product consistency by conducting inspections of seasonings, portions, and the appearance of food.
  • Ensure that new food is stored correctly to minimize waste and maximize quality.
  • Coordinate service with restaurant and banquet operations.
  • Coordinate the inventory, purchasing, and disbursement of all supplies with the purchasing manager.
  • Ensure that proper sanitation practices are followed.
  • Recruit and select staff.
  • Schedule staff based on forecasted volumes.
  • Prepare reports summarizing food and beverage profitability, customer satisfaction, etc.
  • Keep current with the local competition; adjusts the menu periodically to create a “point of difference” in the marketplace.
