Share Email Opening Title 555 Senior Cook  Location Shingobee on the Bay   Description POSITION SUMMARY JOB DESCRIPTION: Responsible for providing the highest quality food products for all guest and employee dining areas. ESSENTIAL FUNCTIONS RESPONSIBILITIES: Creates a variety of main course, starch, vegetable, sauté and desert items independently or through menu and recipe interpretation. Demonstrates knowledge of all menu items, cooking procedures and handling of all food and beverage products. Responsible for following recipes, cooking times and temperatures according to the guidelines set by management. Consistently practice all procedures for food storage, rotation, spoilage, sanitation and the prevention of cross-contamination Delivers exceptional internal and external guest service standards. Meets expectations of line cook positions and performance standards. Maintains full understanding of each line position and responsibilities at each station Learns and understands menu and food preparation at all stations. Understands the impact of the kitchen staff on guest satisfaction Meets or exceeds kitchen sanitation standards Meets ticket time goals. Backs up and assists Cooks as needed. Trains Cooks in food preparation, food storage, sanitation and the prevention of cross-contamination. Maintains knowledge of all events in the property as a whole. Attends and/or facilitates all mandatory meetings and training. Maintains confidentiality at all times. Is sensitive to Native American Culture. Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations. Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe. Performs other duties as assigned.   Position Requirements KNOWLEDGE, SKILLS, AND ABILITIES: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. POSITION REQUIREMENTS: Possess knowledge of food quality standards and understanding of service and atmosphere as they relate to the line cook position. Ability to work independently. Must be dependable and reliable. Working knowledge of food service equipment and utensils. Knowledge of federal and state sanitation guidelines. PHYSICAL REQUIREMENTS: Physically capable of remaining on feet for long periods of time. Subject to internal working conditions, including a smoking environment. Must be able to lift up to 50 lbs. EDUCATION AND SKILLS Education Required: High School Diploma or General Education Equivalency (GED), ServSafe Certification. Education Preferred: Culinary coursework Experience: Minimum of two years of quantity buffet cooking or full service dining experience required.
