The Dietary Director is responsible for planning, organizing, developing, and directing all aspects of the dietary department in accordance with the federal, state, and local regulations, and Ministry policies. The Dietary Director will oversee the daily operations including staffing and personnel issues, food production, budget and inventory management, policies and procedures and compliance. This position will serve as a vital link between the individuals we serve, the dietary department, nursing and medical providers to ensure the health and proper nutrition of the individuals, while utilizing a person-centered approach to assist the individuals in fulfilling their desires and needs for an independent life. This position will serve as a member of the Leadership Team and various committees to help direct not only the dietary department but the overall direction of the facility. This position will supervise and manage the workflow of all dietary employees.
Work performed is of a complex, clerical, hands-on, technical, professional, and confidential nature. This work requires leadership qualities, management skills, knowledge of menu planning, dietetic principles, regulatory knowledge and confidentiality of individual's information. This position also requires excellent communication skills, problem solving skills and the ability to make critical decisions. This position will have frequent contact with the individuals that we serve, family members, dietary consultants, regulators, medical providers and other staff. A positive image and conduct of a professional nature is required at all times. This position must be able to perform multiple tasks simultaneously and have the ability to work productively with other department heads, personnel, and the dietary consultant. This position will be expected to attend local, state and national meetings/seminars, facility and corporate meetings and Ministry events as necessary. The Dietary Director reports directly to the Regional Director. This position is independent and self directed being responsible for the essential functions listed below.
PRINICIPLE RESPONSIBILITIES/ESSENTIAL FUNCTIONS:
(1)Responsible for the day to day operations of the Dietary Department. This includes, managing the daily workflow, ensuring proper food production, ensuring proper staffing including assignments and work hours during hours of operation, the development, implementation and monitoring of departmental goals and ensuring a healthy, safe environment for staff and individuals that we serve.
(2) Responsible for the management, supervision and development of dietary personnel. This includes the interviewing, hiring, orientation, evaluation, training, counseling, disciplining, and termination of dietary personnel, the development of ongoing training programs such as family style dining and ensuring staff have the proper skills qualifications and requirements to work in the department. Also includes the orientation and training of other staff related to dietary operations, assisting with and understanding our individuals' dining and nutritional needs.
(3) Responsible for the development and management of the dietary budget including inventory control. This includes, development of the annual dietary budget for administrative and fiscal review and approval, operating and managing the budget with the established guidelines, ordering/purchasing food, equipment and supplies within budgetary and operational parameters, managing inventory in a fiscally responsible way, providing acceptable documentation for purchases (P.O.s and receipts), budget requests and capital/equipment requests, providing documentation and information on budget shortfalls and overages and working cooperatively with Administration and Finance on budget items and expenses.
(4) Responsible for ensuring regulatory compliance for the Dietary Department with various agencies and regulations. This would include, Ohio Department of Health, Local Health Department, OSHA, HIPAA, Ohio DD and individual rights regulations, State fire marshal and building codes, Federal and State Department of Labor regulations, established rules and regulations related to food production/food safety/ food contamination, Infection Control and Universal Precautions, and other regulations as it related to the care and treatment of individuals with disabilities.
(5) Responsible for the development and administration of the Dietary Department's policies and procedures. This includes writing, implementation, interpretation and enforcement of policies and procedures, training and education related to new or revised policies and procedures and ensuring that polices and procedures are reviewed and revised on a regular basis and meet regulatory and corporate guidelines.
(6) Responsible for producing and maintaining various reports, materials and summaries for personnel, financial, regulatory compliance and Ministry purposes. This includes information and reports for payroll and personnel purposes, training/education materials and records, budget and financial records such as invoices and purchase orders, individual health/dietary information, dietary department records, individual satisfaction surveys and results and other reports or information necessary for compliance or Ministry purposes.
(7) Responsible for ensuring the nutritional needs and assisting with the overall health needs of the individuals we serve. This includes evaluating and monitoring individual's weight for nutritional and health needs, processing new diet orders, performing quality assurance functions to ensure the safety of the foods being served, working with nursing services, dietary consultants and other medical providers on diet changes and other nutritional needs and keeping all diet information updated.
(8) Responsible for nurturing a positive environment which empowers the individuals we serve to build meaningful relationships, achieve their own goals, pursue their own dreams, and assist them daily to live the life they choose. This includes actively listening, communicating effectively both verbally and non-verbally, brining value to the individual's life, creating opportunities for socialization, making choices, and educating individuals in decision-making skills. This can be accomplished through assisting with and teaching the skills necessary to gain greater independence in activities of daily living and the development of self-help and social skills per IP/ISP.
(9) Responsible for assisting the Regional Director and serving as a member of the Leadership Team. This includes attending and participating in Administrative Staff meetings, assisting during regulatory audits and responses to audits, assisting with special projects and requests for information, implementing and enforcing policies related to general operational issues, assisting with the investigation of individual or employee related issues and participating in various committees and meeting such as Safety, Infection Control, initial, periodic and annual IP/ISP and discharge planning.
(10) Responsible for planning and organizing special functions. This includes theme meals, meals during camp-in-motion, anniversary party, prayer luncheon, holiday parties, etc. Also includes ensuring the proper staffing and food for each event.
(11) Responsible for performing other duties as necessary. This includes assisting with local and Ministry fundraisers, serving on special ad-hoc committees, representing the facility at local or statewide events or meetings and assisting with operations in emergency situations by assisting the individuals we serve or performing other duties as necessary.
WORKING CONDITIONS:
Work is primarily in the facility. May include other external settings that correspond to indoor and outdoor environments. Work hours are generally Monday thru Friday 8:00am until 5:00 pm but may include any shift, weekends, and holidays for operational needs. Occasional long hours may be necessary. This position will be required to travel offsite on an occasional basis, locally, statewide or nationally for meetings, seminars and events.
