The Beast restaurant at AREA15 is seeking an innovative and guest-focused Room Chef to lead our casual dinning venues and elevate the culinary experience. We are looking for a passionate chef who thrives on creativity and guest interaction, delivering both outstanding flavors and memorable surprise-and-delight moments. This role requires a chef who can take our steampunk-inspired gastropub cuisine and casual American cuisine to the next level while maintaining the relaxed and immersive dining experience that The Beast is known for.

RESPONSIBILITIES AND DUTIES:

  • Develop and enhance menu offerings with bold, creative flavors while maintaining American-style roots. Take full ownership of menu creation, including seasonal specials and new dishes.
  • Have a thorough understanding of all kitchen team roles and be hands-on, stepping in as needed or ensuring suitable replacements are in place.
  • Interact with guests during service, delivering engaging, surprise-and-delight moments.
  • Maintain the highest quality of raw and cooked food products.
  • Ensure exceptional standards in food quality, preparation, presentation, and flavor.
  • Collaborate closely with the Executive Chef, restaurant managers, and front-of-house staff to deliver a cohesive and seamless dining experience.
  • Collaborate with HR to ensure optimal team member recruitment, retention, and development, supporting a positive and effective kitchen environment.
  • Lead and manage the culinary kitchen team, including stewards, providing guidance, setting performance standards, and monitoring performance.
  • Demonstrate new cooking techniques and equipment to staff.
  • Administer property policies fairly and consistently.
  • Establish and manage performance, budget, and team goals.
  • Manage department controllable expenses, including food costs, supplies, uniforms, and equipment.
  • Ensure compliance with food handling and sanitation standards, and ensure employees maintain required certifications.
  • Utilize technology and business planning software to build financial projections and reports in a timely manner.
  • Collaborate with the Private Sales team to ensure BEOs (Banquet Event Orders) are executed with exceptional attention to detail.
  • Set and manage fair, consistent weekly team member schedules for kitchen staff, ensuring compliance with AREA15 standards.
  • Oversee daily and weekly cleaning schedules for back-of-house operations.
  • Maintain timesheets by verifying, auditing, and correcting team member hours to ensure accurate and properly logged records.
  • Work with local suppliers for food, dry goods, and supply purchasing.
  • Manage inventory, cost of goods, labor, and work cards while overseeing food costs, portion sizes, and waste reduction to maintain quality and innovation.
  • Train, mentor and lead kitchen staff to create a collaborative work environment.
  • Conduct staff training, motivation, one-on-ones and corrective coaching.
  • Create and improve policies and procedures for the F&B culinary department.
  • Ensure compliance with Nevada health, safety, and sanitation standards in the kitchen at all times.
  • Exhibit ART! (AREA15's service standards) at all times.?
  • Adhere to department and company policies and procedures.
  • Be available to respond to time-sensitive matters.
  • Maintain a professional, neat, and well-groomed appearance, adhering to AREA15 standards.
  • Work various shifts, including nights, weekends, and holidays.
  • Perform other work-related duties as assigned.

Position Requirements

QUALIFICATIONS & SKILLS:

  • Applicants must be 21 years of age or older
  • Proof of eligibility to work in the United States
  • Strong background in American, Southern cuisine, or comfort foods with the ability to innovate and elevate classic dishes.
  • Strong ability to create and develop restaurant menu.
  • Experience as a Room Chef, or Head Chef in a high-volume restaurant.
  • Making decisions and solving problems in a fast-paced environment
  • Passion for guest interaction and delivering immersive dining experiences.
  • Resolving conflicts and negotiating with others
  • Proficient knowledge of timekeeping software (Paychex), and purchasing systems (Yellow Dog) is preffered
  • Working knowledge of Microsoft Office Suite (Word, Excel, PowerPoint, Outlook)
  • Must be organized and detail oriented when dealing with food standards, costs, safety, creating work schedules, shipments, cleaning schedules, etc.
  • Proficient knowledge of applicable SNHD guidelines and requirements
  • Valid Health work card
  • Demonstrate strong leadership skills, including exceptional time management and delegation
  • Must be able to work extended hours as needed.
  • Must be able to individually lift & carry 50lbs
  • Must be able to stand, walk, bend and lift for extended periods of time
  • Must be proficient in the English language; additional language skills preferred
  • Leadership experience in managing and training kitchen staff.
  • Strong understanding of food cost management and portion control.
  • Excellent communication and organizational skills.
  • Must be able to thrive in a fast-paced, dynamic environment.
  • Must be available for nights, weekends, and holidays as needed. 
  • Experience in establishing and maintaining interpersonal relationships.
  • Ability to commute between office and venue(s).
  • Availability for varied shifts, including evenings, weekends, and holidays.
  • Ability to work in an environment subject to varying levels of noise, crowds, flashing lights, and smoke.
  • Must have the ability to withstand high temperatures, heat, and sun exposure.
