Description

Department:  Operations (Prep or Pizza Area)
Reports to:  Kitchen/Dish Supervisor, Manager
Status:  Hourly
Job Purpose:  Work in an efficient manner to produce quality product by following 
Marzoni’s recipes and procedure standards

Essential Job Results

1. Prepare quality food
by following Marzoni’s recipes and procedure standard

2. Ensure proper sanitation of food and work areas
by following FDA code and Marzoni’s standard

3. Proper sanitation of equipment, utensils, and restaurant
by helping in preventative maintenance of equipment, utensils, and restaurant

4. Prepare consistent product
by knowing and learning Marzoni’s recipes

5. Maintain Safety Temp Sheets
by regulating and monitoring safe and quality temperatures

6. Be a crew/team member
by helping co-workers and restaurant in any situation

7. Communication
by effectively communicating with co-workers/supervisors/managers

8. Professional demeanor
by remaining professional in all situations or areas of the restaurant

9. Improve knowledge of product and procedures

10. Time Management
by using time at work in an efficient and effective manner to complete duties of designated job

 
Position Requirements

Cook I Specific Duties
 

Pizza Kitchen
1. Operation of Brick Oven and Equipment:  Panini Grill, Reach-in coolers, Dough Sheeter, Oven hoods, Dough Mixer, and Hot wells.

2. Proper Sanitation and Preventative Maintenance of Brick Oven and Equipment:  Panini Grill, Reach-in coolers, Dough Sheeter, Oven hoods, Dough Mixer, and Hot wells, Brick Oven Utensils.

3. Proper Sanitation and Preventative Maintenance of walls, floors, drains and shelves.

4. Follow HACCP guidelines and complete Safety Temperature Sheets.

5. Proper handling, preparation, pulling, and rotation of pizza dough.

6. Maintain presentable appearance and professional demeanor by Marzoni’s standard – open kitchen.

Prep Kitchen


1. Operation of Equipment:  Alto Shams, Combitherm Oven, Slicer, Reach-in coolers, Blender, Mixing Bowl, Pasta Cooker, Dough Mixer, Stove Tops.

2. Proper Sanitation and Preventative Maintenance of Equipment:  Alto Shams, Combitherm Oven, Slicer, Reach-in coolers, Blender, Mixing Bowl, Pasta Cooker, Dough Mixer, Stove Tops.

3. Proper Sanitation and Preventative Maintenance of floors, walls, drains, shelves.

4. Proper labeling, rotation, and organization of product in walk-in cooler, prep room, and dry storage.  FIFO: First in-First out.

5. Follow Marzoni’s recipes to standard to prepare quality product.

6. Follow Preparation Par Level Sheets to maintain proper production and control food waste.

7. Document Food waste and alcohol used in production.
