Position Sushi Line Cook - Kaia  

Join the immersive world of ART, MUSIC & AMUSEMENT at AREA15, where the boundaries between reality and limitless creativity blur. Welcome to the "What's Next District.”

The Sushi line cook is responsible for the execution of Kaia by participating in the creation of all menu items. The Sushi Line Cook will be responsible for all aspects of sushi production and food preparation. The successful candidate must have experience working in a sushi restaurant as well as a demonstrated ability to work well in a customer-facing environment. The role focuses on improving guest satisfaction while ensuring compliance with SNHD sanitation and food standards. This position reports to the Executive Sous Chef.


  • Prepare all menu items according to approved recipes in a timely manner.

  • Exhibit excellent time-management skills in food item preparation and customer service.

  • Work as a team member to ensure success in all areas of the restaurant.

  • Discard any leftover items that cannot or should not be saved.

  • Recommend menu items or ingredients that complement each other.

  • Inventory all fish and seafood items.

  • Properly store all fish and seafood.

  • Maintain station and prepare all menu items following directives from the Executive Chef.

  • Always maintain a hygienic and safe work environment.

  • Report to work punctually.

  • Prepare all dishes consistently by adhering to all recipe standards.

  • Collaborate with all staff to ensure efficient and accurate service in compliance with restaurant standards for food preparation, temperatures, ticket times, and flavor profiles.

  • Ensure that equipment is maintained as outlined in the restaurant's safety and preventive maintenance programs.

  • Monitor the quality of raw food products to ensure that standards are met.

  • Recognize superior quality products, presentations, and flavors.

  • Ensure compliance with food handling and sanitation standards.

  • Follow proper handling and maintain the right temperature of all food products.

  • Work with local suppliers for purchasing food, dry goods, supplies, etc.

  • Exhibit ART! (AREA15’s service standards) at all times.

  • Manage inventory, COGs, labor, and other duties as assigned.

Position Requirements


  • Applicants must be 21 years of age or older.

  • Proof of eligibility to work in the United States.

  • Minimum 1 year of sushi experience in a high-volume sushi restaurant or a related setting.

  • Comfortable participating in a creative, entrepreneurial start-up environment, introducing new concepts, and innovations.

  • Proficient in making decisions and solving problems in a fast-paced environment.

  • Skilled in resolving conflicts and negotiating with others.

  • Strong organizational and detail-oriented abilities when managing food standards, costs, safety, work schedules, shipments, and cleaning schedules.

  • Abiding by Standard Operating Procedures (SOPs) as set by AREA15.

  • Proficient knowledge of applicable SNHD guidelines and requirements.

  • Competent in establishing and maintaining interpersonal relationships.

  • Possession of a valid SNHD Health Card.

  • Demonstrate strong leadership skills, including exceptional time management and delegation.

  • Ability to work varied shifts, including weekends and holidays.

  • Ability to lift up to 50 lbs.

  • Adaptability to working in an environment subject to varying levels of noise, crowds, flashing lights, and smoke.

  • Able to stand, walk, bend, and lift for extended periods.

  • Proficiency in the English language; additional language skills are preferred.

  • Ability to withstand high temperatures, heat, and sun exposure.
