Our pay is very competitive and benefits vary for seasonal or year-round staff. Position F&B - Captain  
Description

Position Title: Captain

Reports To: F&B Manager

Department: Food & Beverage

Employment Dates: Temporary Seasonal; May - Mid October

Purpose of Position: Under the direction of the F&B Manager, the Captain is an exempt temporary seasonal position supervising staff and assisting with professional and efficient management of front of house operations. Ensures the highest quality of service as meets expectations of Club members. Performs all work in accordance with essential functions and responsibilities as described below and in the spirit of the Club's mission and vision.

Responsibilities:

Duties shall include but not be limited to:

  • Assists with overseeing the successful management of dining room operations and food service to extended Clubhouse areas such as locker rooms, cottages, and decks. Ensures quality of product and service with intent to provide the highest level of member and guest dining satisfaction.
  • Performs server duties as well as supervises and directs wait staff. Assists F&B management with hiring, training, scheduling, and performance assessment. Ensures staff is always professional in appearance and performance.
  • Supervises the hosts and manages the reservation book in coordination with member services. Takes reservations, as needed and guides the reservations schedules mindful of capacities. Is knowledgeable of, and accommodates members' preferences. Assists the hosts in welcoming and seating members and guests.
  • Performs, or assists with, dining room set-up in anticipation of member and guest counts and needs.
  • Possesses a thorough understanding of the Point of Sale system and assists in maintaining it under the direction of F&B management.
  • May perform opening and/or closing procedures, as designated. Assists F&B Manager in reviewing and approving waiter packets for completeness and accuracy. At PM shift, accurately completes POS end of day processing and all required reports for each F&B outlet as determined by management.
  • Responds to and resolves complaints concerning food, beverage, and/or service. Engages with members as well as staff and is empathetic to the needs of both constituencies. Keeps F&B management and COO informed of problems and concerns.
  • Performs and helps direct completion of all scheduled side work, including cleaning of dining areas and equipment and stocking of supplies. Assists with food, beverage, and equipment inventories, as needed.
  • Assists F&B Manager with maintaining the correct appearance, cleanliness and safety of dining room areas, equipment and fixtures.
  • Secures dining room and Clubhouse areas as designated.
  • Keeps informed of industry standards and trends. Pursues related continuing education and training opportunities. Maintains necessary certifications and applicable professional affiliations.
  • Attends and conducts F&B related meetings as required.
  • Performs other duties as designated by the F&B and senior management.
 
Position Requirements

Qualifications:

  • Detailed knowledge of restaurant industry fine dining standards for food, beverage, and service.
  • Thorough understanding of service sequence and standards with the ability to effectively train personnel
  • Computer skills (Microsoft Word, Microsoft Excel and familiarity with restaurant POS systems)
  • Excellent written and oral communication skills
  • Organizational skills

Experience/Education:

  • Associate’s degree or related hospitality degree, preferred
  • Three years of fine dining serving experience; at least one as Captain, preferred
  • Two years of private country club dining room management experience, preferred
  • TIPS certification
  • Certificate of Allergen Awareness Training recognized by Massachusetts Department of Public Health

Work Environment and Physical Demands:

  • Work tasks are performed indoors and outdoors and involve physical strength and endurance. Must be able to work in varying temperatures and inclement weather.
  • Position requires walking and standing for long periods of time. Length of time of these tasks may vary from day to day and task to task.
  • Must be able to exert well-paced ability to maneuverer between functions occurring simultaneously.
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
  • Requires communicating effectively with members, guests, co-workers, and supervisors.
  • Must be able to lift up to 30 lbs. on a regular and continuing basis.
  • Must be able to lift trays of food or food items weighing up to 30 lbs.
  • Must be able to push and pull carts and equipment weighing up to 50 lbs. occasionally.
  • Requires manual dexterity to use and operate all necessary equipment.
  • Requires occasional exposure to tobacco smoke.

Projected Work Schedule: Must be available to work a minimum six day work week averaging over 40 hours per week. Hours during the season may require weeks averaging over 50 hours as needed. Any request or anticipated absence from the agreed schedule requires prior approval from the F&B Manager.
