Fifth Group Dishwashers play a critical role in the smooth operation of the restaurant; their work is important and significantly contributes to a well-run kitchen. The Fifth Group Dishwasher/Steward follows high standards of cleanliness, attention to detail, and sanitation. They must be able to operate both without significant supervision and as part of a team in a high volume, fast-paced work environment.

  1. Maintains Fifth Group standards in the areas of cleanliness organization and waste stream management.
  2. Know and follow all applicable State and County food safety and Health Department standards.
  3. Responsible for thorough dishwasher station set-up, operation and breakdown.
  4. Demonstrates superior skills for all dishwashing duties, including but not limited to: Keeping kitchen stocked with clean pots and pans, keeping FOH stocked with clean china, silver, and glass, polishing silverware and glassware, the ongoing removal of all restaurant and event trash, recycling, compost, and waste oil to their proper containers.
  5. Consistently works to maintain: Clean dish area & equipment, clean & dry floors, clean dumpster pad & waste oil areas, and clean & tidy loading area.
  6. Completes all assigned, opening/closing duties, duration duties, and weekly cleaning projects.
  7. Completes, upon request food preparation tasks.
  8. Completes, upon request garbage removal for offices, or day cleaning duties/assisting with FOH cleaning and BOH deep cleaning.
  9. Consistently checks out with a manager at the end of the shift.
  10. Achieves knowledge of restaurant concept and Fifth Group history and personnel.

Position Requirements

  • Ability to read, comprehend and follow usage instructions for cleaning products and equipment

Physical Requirements

  • Constant standing and walking
  • Frequent stooping, kneeling and crawling
  • Frequent ascending or descending of ladders, stairs and/or ramps
  • Must be able to stand and exert well-paced mobility for up to 8 hours per shift
  • Frequent, continual, intermittent flexing and rotation of the spine, elbows and wrists
  • Must be able to lift up to 20 lbs on a regular and continuing basis
  • Frequent pushing, pulling, lifting or carrying up to 50 lbs, i.e. full racks of dishes, etc
  • Constant talking, expressing or exchanging ideas by means of spoken words and in the process of communicating with employees
  • Talking and hearing occur continuously in the process of communicating with employees
  • Requires manual dexterity to use and operate all necessary equipment
