POSITION SUMMARY

The Chef de Partie position is directly responsible for the production of a specific department within the kitchen. The position is responsible for assisting in maintaining all Sawridge Group of Companies Food and Beverage Policies and Procedures as they relate to the kitchen. Promotes a creative and professional atmosphere within area of responsibility. Ensures all completed menu items meet or exceed posted standards for presentation. Ensures department is clean, save and makes recommendations to Sous Chefs for scheduling.

KEY DUTIES AND RESPONSIBILITIES

  • Maintains Sawridge Group of Companies standards for food preparation, quality and presentation
  • Prepares purchases or requisitions needed for section and submits to Sous Chef and/or Exceutive Chef
  • Provides training and coaching for culinary associates assigned to their section
  • Conducts pre-meal meetings with associates and coaches on superior product offerings
  • Maintains all occupational standards including Food Safe documentation for associates, WHMIS, regional health department policies
  • Ensures appropriate levels of production according to business volumes
  • Assist Sous Chef/Chefwith menu creation, recipe development and production planning
  • Ensuring high levels of food quality, presentation and preparation
 
Position Requirements
  • 6-8 years total culinary department experience
  • Flexible and an ability to work under pressure
  • Excellent communication skills, both verbally and written
  • Ability to work in a team environment and provide coaching and mentoring to associates
  • Neat , well groomed and professional
