Pastry Assistant 

Location Ecco Buckhead  

The pastry assistant is a highly organized self-starter, who manages the daily needs of the restaurant pastry program. They are responsible for the production of all plated dessert components, including cakes, tarts, custards, fillings, sauces, garnishes, sorbet, and gelato (where applicable). They will report to the Executive Chef at the restaurant as well as the Executive Pastry Chef.


  • Creates daily pastry production lists based on inventory, established pars and sales
  • Reviews Group Dining contracts and produces BEO desserts as needed
  • Follows recipes provided by Executive Pastry Chef and produces all desserts and their components as instructed
  • Bridges gap between kitchen and the line to ensure pantry is stocked and dessert plating standards are being followed
  • Maintains a clean and organized work station
  • Trains with the Exec. Pastry Chef on menu changes and learns new techniques. Assists in the creation of seasonal menu items
  • Maintains dessert recipe book and makes updates and changes where necessary
  • Communicates dessert inventory and ingredient needs with Chef teams on a daily basis.
  • Works with Fifth Group Pastry team during holidays to execute large volume dessert needs.

Position Requirements

Skills & Characteristics

  • Culinary degree or equivalent
  • Basic knowledge of pastry techniques, measurements and recipes required
  • One to two years’ experience owning pastry preparation
  • Self starter, takes initiative, able to work under direct and indirect supervision
  • Efficient multi-tasking
  • Creative, eye for detail
  • Organized
  • Dependable, reliable, punctual

Physical Requirements

  • Constant standing and walking
  • Frequent stooping, kneeling and crawling
  • Frequent ascending or descending of ladders, stairs and/or ramps
  • Must be able to stand and exert well-paced mobility for up to 8 hours per shift
  • Frequent, continual, intermittent flexing and rotation of the spine, elbows and wrists
  • Must be able to lift up to 20 lbs on a regular and continuing basis
  • Frequent pushing, pulling, lifting or carrying up to 50 lbs, i.e. full racks of dishes, etc
  • Constant talking, expressing or exchanging ideas by means of spoken words and in the process of communicating with employees
  • Talking and hearing occur continuously in the process of communicating with employees
  • Requires manual dexterity to use and operate all necessary equipment
