Description

The Food and Beverage Intern is responsible for assisting the Food and Beverage Managers with all restaurant, bar, and banquet operations on a daily and shift-by-shift basis; essentially being the 'face of the operation.' This position utilizes a hands-on approach. The Food and Beverage Intern ensures that all Front of House staff are consistently providing a superb dining experience by effectively interacting with external guests.

Duties/Responsibilities:

  • To be well versed in the opening and closing procedures for all outlet/concept operations, crossed trained in all operations and capable of supervising each one.
  • Required to read all the SOP's, understand them fully and make sure they are being implemented/followed daily.
  • To conduct daily pre-shift meetings - reviewing the activity for the day, menu additions/subtractions, VIP reservations or any additional information that pertains to the restaurants.
  • To ensure that customer problems/complaints regarding food and beverage quality are handled in an effective, expedient and courteous manner by 'touching' tables to inquire about guest experience and report to senior management any deficiencies.
  • To be responsible for the motivation and continual training of employees.
  • To ensure that all FOH restaurant staff behavior and appearance are in compliance with established policies, including uniform and grooming standards
  • To monitor food preparation, proper cooking method and portion sizes with the accompanying garnishes. Report any deviations to manager or kitchen manager.
  • Be fully versed in all menus, their ingredients and allergens.
  • To be well versed in each Front of House position by training in each position during internship.
  • To be properly trained in using the POS system, how to place orders, make changes and authorize adjustments including 'comp' meals.
  • To be trained on how to create weekly schedules, approving payroll and Tip reporting.
  • To monitor employee meals and breaks, ensuring that they are taken at the proper time and are on the authorized menu list and occurring in proper areas.
  • To monitor the employee adherence to all policies and procedures.
  • To know period sales goals and expenses. Compare the daily totals against budget and last year using the Daily Report and Weekly Forecast.
  • To assist managers with daily shift cashing out procedures, and making 'cash drops.'
  • To monitor employee and customer activities in order to ensure liquor regulations are in compliance, report any issues to MOD.
  • Other duties as assigned.
 
Position Requirements

The ideal candidate will possess the following Knowledge, Skills and Abilities:

  • Technical Skills: We require at least 1 year (or previous equivalent internship experience) of food and beverage industry experience and knowledge working with various kitchen equipment, food items, guest service skills, and a fast-paced kitchen environment.
  • Leadership and Management: Demonstrated understanding and practice of motivational management techniques. We prefer 2 years of proven leadership experience in an internship role or other previous job experience.
  • Customer Service and Professionalism: Proven experience serving as a role model and setting the standard for all staff to maintain high-quality and consistent customer service.
  • Problem Solving, Quality Control, and Priority Assessment: Must evaluate current practices and processes; immediately recognize potential areas of conflict; and suggest ways to improve current business methods and services provided.
  • Communication: Commitment to details both verbally and non-verbally and ability to encourage cooperative and consistent levels of communication with the kitchen staff, front-end staff and management. Must understand instructions, read written company information and communicate with little or no additional direction.
  • Interpersonal Relationships: Ability to adapt to different personalities of guests, staff and outside vendors without losing focus. Must possess high professional ethics and avoid extreme familiarity or conflicts with others.
  • Conflict Management: Capacity to recognize problems when they arise and be able to resolve them appropriately by using good judgement, tact, and initiative according to company policy and procedure. Requires unbiased communication skills to handle all types of conflicts that will occur at all levels of supervision and the ability to negotiate effectively.
  • Perform General Physical Activities: Ability to perform physical activities in a variety of environmental conditions that require moderate to maximum strength including climbing, lifting, balancing, walking, handling materials.
  • Flexibility: Must be available to work overtime when needed, assist with the workload of others, and perform other duties as assigned.
