EMPLOYEE OWNER POSITION PURPOSE:

The Executive Chef is responsible for providing high-quality cuisine and delivering an exceptional customer experience. As first in command of the kitchen, this position plays a key role in maintaining and enhancing the satisfaction of all who come in contact with Food & Beverage.

JOB DUTIES AND RESPONSIBILITIES:

  • Creation of high-quality menus items in terms of design as well as taste, and development of recipes that meet the needs of the Desert Princess Community as well as surrounding area
  • Effective management of all cost control systems including inventory, recipes, prep sheets, waste sheets, temperature charts and menu engineering
  • Accountability of budgeted kitchen costs including labor, kitchen supplies and food purchases
  • Ordering of all food and kitchen supplies, maintaining appropriate inventory levels according to changing business needs
  • Supervision and training of kitchen team in regards to preparation and execution of all dishes
  • Ensure the kitchen operates in a timely manner that meets our high-quality standards
  • Hire, train, and mentor kitchen team members; establish schedules and assess performance
  • Conduct daily, weekly and monthly training sessions with the kitchen team as well as front of house team members
  • Scheduling of all kitchen team members adhering to budget requirements
  • Take full ownership of any issues that may arise in the kitchen
  • Ensure that a strict sanitation program is in place and is followed throughout the entire kitchen operation as well as abide by and enforce strict health and safety standards established by local, state and federal agencies
  • Maintain all kitchen equipment and ensure all are in good working order at all times
  • Meet regularly with members, residents and local guests to stay connected with the community and ensure that we are meeting their expectations
  • Other duties and special projects as assigned

QUALIFICATIONS:

  • Current Food Manager Safety Certification (i.e. through ServSafe)
  • High School Diploma (or equivalent); Culinary Degree preferred
  • Proficiency in kitchen administration and meal preparation - with a minimum of (5) years of experience
  • Familiarity with country club/hotel/high-end operations
  • Solid knowledge of Microsoft Outlook, Excel, and Word; intermediate skills a plus
  • Conflict resolution skills
  • Excellent written and verbal communication
  • Must be a team player who is committed to delivering high-level customer service
  • Adaptable and dependable with a solid attendance record
  • Professional and respectful demeanor with all staff and guests at all times
  • Ability to work independently and follow instructions with minimal supervision

SPECIAL POSITION REQUIREMENTS:

  • Must have and maintain a valid driver's license, vehicle insurance, and driving record in compliance with Company policy

ESSENTIAL FUNCTIONS:

  • Use standard office equipment, including: computer, phone, copier/scanner, etc.
  • Use standard kitchen equipment and supplies, including: appliances, tools, knives (excellent knife skills required) and food/beverages
  • Keen eye-hand coordination, as well as an astute sense of taste and smell
  • Be stationary or in motion for periods of time (often in motion)
  • Lift and move up to (40) pounds
  • Travel to and from offsite locations

SUPERVISES OTHERS? IF SO, LIST:

  • Team of kitchen staff, including Cooks, Food Expeditors/Runners, and Dishwashers

SCHEDULE & TRAVEL:

  • Shifts will vary based on business needs
  • Required to work weekends and holidays
