Description

The general purpose of this job is to prepare food items for resident meals and other activities that are not the direct responsibility of the cook.

Duties and Responsibilities

Preparation and service of cold food items for the Skilled Nursing tray line and SNF / RCFE dining rooms in accord with the posted menu.  Perform tray line assembly as assigned in schedule.

Contribute to efficiency of tray line assembly which is to be completed within one hour from start time.

Prepare various salad, dessert and beverage items for tray line and special events according to menu, specified serving size and Supervisor’s directions.

Making of sandwiches as needed and fulfilling other resident requests in compliance with their documented diet.

Rotating all stored food items according to FIFO method.

Read and interpret tray tickets accurately for food service line.

Serving both hot and cold food items for tray line according to ticket and diet specifications with less than 5% error.

Record all refrigeration temperatures at start of a.m. shift and close of p.m. shift and food temperatures at beginning of each tray line assembly.

Cleaning of all equipment and storage areas related to food preparation area according to established procedures and Serve Safe guidelines.

Other responsibilities in keeping with the training of individual staff members may be assigned at the discretion of the Supervisor or Manager.

Garnish all prepared food items.

Answer phone inquiries from resident care areas.

Adhere to professional dress code that reflects the mission of Santa Teresita with excellent grooming and appearance.

Follow all guidelines in the handbook and policies, as well as, all safety procedures established by Santa Teresita

Attend all in-services, meetings and other training required by this position

 
Position Requirements

Qualifications and Education Requirements:

Minimum of High School Degree or equivalent

Minimum 3 years food preparation experience in a healthcare facility

At least 18 years of age

Read, write, speak and understand English at a high school level.

Active Serve Safe Certification.

Availability to work weekends and holidays.

Interpret menu and perform basic math.

Skills and Job Requirements:

Use of knives and other kitchen equipment for quantity food production.

Accuracy in measurement for ingredients used in recipes and other food combination methods.

Read and interpret recipes for outcomes of high quality food production according to industry standards.

Knowledge of proper inventory rotation in First In First Out method.

Prioritize multiple tasks within time limit restrictions; ability to handle stress associated with time pressures and frequent evaluation of food product.

Ability to respond to frequent interruptions without getting distracted from priorities.

Ability to work independently without need for constant supervision.

Respond to residents, families and co-workers in a polite and friendly manner.

Working Conditions

Unless otherwise agreed upon hire, staff members must generally be available to work weekends and holidays.

Subject to extreme temperatures ranging from 0°F – 200°F.

Subject to strong odors/smells.

Exposure to chemicals that can be skin or eye irritants.

Subject to hostile behavior from residents and families

Physical and Sensory Requirements

Must be able to stand in one place for extended period of time.

Must be able to be on feet, either standing or moving about, for extended periods of time.

Must be able to safely lift at least 25 lbs. individually and 50 lbs. In partnered lifting.

Must be able to safely push at least 150 lbs. on industry approved moving apparatus.

Comfortably use repetitive movements of fingers, hands and arms.
