Pastry Cook- Bold Catering & Events

Position Duties and Responsibilities

  • Arrive on time and dressed appropriately in chef whites with a hat and non-skid shoes
  • Able to lift and carry up to 50lbs when needed
  • Prepare and bakes breads, cakes, cookies, pies, puddings, and/or desserts, according to the recipe or chef’s instructions
  • Measures ingredients, using scale, liquid and dry measuring cups
  • Mix ingredients to form dough or batter, using stand mixers or mix by hand according to the recipe or chef’s instruction
  • Shapes dough for biscuits, cookies, pies, and assorted pastries, using rolling pin or sheeter and cutters
  • Assist in bread production making quick breads, breadsticks, and assorted yeast doughs
  • Properly Proof and/or bake breads/pastries in convection and deck ovens
  • Properly use fryer for cooking pastries or garnish
  • Adjust oven temperature based on the products needs prior to loading the oven
  • Set timer in bakeshop for items in the proof box and the oven
  • Prepare fillings, meringues, and icings based on recipe and proper procedure
  • Decorate tarts, cupcakes, pies and cakes
  • Assist pastry chef in setting up tastings
  • Properly wrap and label all finished products that are not going to parties and store appropriately
  • Properly wrap and label all products going to parties
  • All products packaged and labeled for parties should be placed in the assigned areas. Baking instructions should be included if needed for the event chefs
  • Items should be highlighted on the prep list and on the order sheets only after the product is properly labeled and put in the appropriate location for the event chefs

Cleaning and Maintenance

  • Maintain a clean work station
  • Take all unnecessary/dirty dishes to the dish pit
  • Clean and properly store all of the pastry chef’s tools
  • Assist in keeping the cooler, freezer, dry storage and bakeshop clean and organized
  • Assist in the cleaning of the floor in all bakeshop areas
  • Assist in cleaning all shelves, mixers, proof box, cooler and counters in the bakeshop
  • Keep bins clean, filled and scoops in the proper location
  • Be aware of product quantity and tell the pastry chef if we are low or out of any products
  • Properly store all products based on health code regulations
  • Wear gloves when handling ready to eat products

Position Requirements

* 1+ years experience in pastry production required

* Scratch kitchen - all items made from scratch

* Cake decorating a plus

* Culinary pastry education preferred

* Team player
