Position Summary:

As the Pastry Chef at Edgewood Tahoe, you are responsible for directing and administering the planning, preparation, production and control of all pastry production in Edgewood’s continuing effort to deliver outstanding guest service and financial profitability. You will direct, oversee and participate in all pastry production and operations, to include, but not limited to, quality preparation and presentation of pastries, desserts and baked goods, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures and cost controls. Essential Functions:

  • Perform all functions of all other positions in the pastry shop to ensure quality products in a timely manner.
  • Oversee product quality and make necessary modifications, training and creating recipe books.
  • Monitor production to maximize quality and minimize waste.
  • Ensure proper rotation (FIFO) and see that leftovers are utilized.
  • Responsible for monthly health inspections and maintaining cleanliness.
  • Responsible for hiring, training and managing performance of all department employees.
  • Work steadily and accurately paying attention to detail.
  • Utilizes proper food handling techniques following Health and Safety standards.
  • Responsible to keep work area clean and organized.
  • Assists Executive Chef on creating and implementing new menus and individual items for all restaurants and banquets/catering.
  • Communicates effectively with other department managers and chefs.
  • Other duties as assigned. Responsibilities and activities may change at any time with or without notice.
 
Position Requirements

Qualifications / Special Skills:

  • The ideal candidate is a seasoned and highly effective culinary professional with outstanding management skills and extensive hands-on experience in Pastry operations.
  • Minimum of 5 years' experience, with proven leadership experience, in a similar resort or restaurant setting.
  • Exceptional communications skills, in both written and oral forms, and commitment to providing excellent service to guests.
  • Bi-lingual abilities and Certification from a Pastry Arts program preferred.
  • Available to work varied shifts when needed, including weekends, holidays, and nights.
  • Must possess a high level of attention to detail.
  • Ensure all pastries are consistently uniform and up to the highest quality standards.
  • Excellent banquet buffet and individual dessert set up and plating skills.
  • Expert in cake and pastry decorating.
  • Ability to create seasonal & special occasion show pieces using a variety of mediums. IE sugar, Chocolate, and Pastiage.
  • Working knowledge of classical and modern dessert techniques.
  • Stay current and informed of useful cutting-edge culinary trends.
