Executive Chef 

Location Gallatin River Lodge  

Position purpose/summary

The major responsibility in this position is to oversee the preparation of all food; therefore a significant portion of time is spent standing up, handling food and kitchen equipment, listening and speaking, and carrying and lifting. The vast majority of time is spent cooking, handling food and working with kitchen equipment, usually while standing up. Communication skills are utilized often when giving instructions or interacting with the cooks, wait staff, or supervisors. Excessive heat is an average in daily activities. Carrying or lifting items that way approximately 50 pounds occurs often. This person utilizes problem solving, reasoning, and organizational abilities often.

Job Duties and Responsibilities:

  • Make periodic and regular inspections of units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance.
  • Coordinate all training activities for kitchen and service employees 
  • Develop recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and established procedures and budgetary constraints; participate in other menu planning activities to include the determination of purchasing specifications, product and recipe testing and menu development.
  • Assist managers as requested in areas such as plate presentation, special function menu planning and the design of new service areas.
  • Prepare operational reports and analyses setting forth progress, adverse trends and make appropriate recommendations.
  • Perform other related duties incidental to the work described herein.
  • Hires, trains and provides career development for kitchen staff; conducts performance evaluations and provides feedback to employees.
  • Schedules all employees in kitchen department to maintain adequate staffing levels while adhering to labor standards.
  • Supervises the cleaning of the kitchen and all kitchen equipment including all dishes, flatware and related equipment to meet all health and sanitation standards.
  • Supervises all cooking operations including methods, portion control and garnishing; ensures attractive presentation of all food and dishes.
  • Ensures that all kitchen equipment is in proper working order; notifies the maintenance department of any malfunctioning equipment.
  • Conducts regular inventory of food and kitchen supplies; orders items as necessary to maintain adequate inventory levels.
  • Assists sales, catering and banquet staffs with banquets, parties and other special events.
Position Requirements


Understand F&B control systems, and have a full understanding of food cost, labor forecasting, local sanitation and health code laws.

Understand the concept of running a high volume restaurant and how to train and get the best out of people.

Must have strong leadership skills.

Must understand the word "TEAMWORK" and utilize teamwork within the work environment.

  • The ideal individual must possess culinary excellence and 3 to 5 years experience in a full-service restaurant with at least 2 years supervisory experience.
  • The position requires the individual to be self-managed, self-motivated, and be detail and service oriented with a focus on the highest level of quality possible.
  • Hands-on ability is a must in working side-by-side with kitchen staff to make sure all food is prepared to perfection.
  • The position will require full start-up of the restaurant including complete design of a menu.
  • Previous restaurant start-up experience is a definite plus.
  • Must have flexible availability.
