POSITION SUMMARY

JOB DESCRIPTION: To supervise and coordinate all food operations and production in all food service venues within the casino as designed by the Executive Chef

ESSENTIAL FUNCTIONS

RESPONSIBILITIES:

  1. Has the ability to perform all functions of supervised positions.
  2. Ensures that all kitchen employees are trained in all aspects of food preparation and presentation according to food & beverage department specifications.
  3. Executes cost control, waste control, inventory and overhead control in all areas of Food and Beverage.
  4. Assures that proper sanitation procedures are implemented and carried out to state and local health standards.
  5. Trains all supervisors and supporting staff in administrative skills and the art of cooking.
  6. Interprets and carries out multiple catered functions and regular dining room activity at the same time.
  7. Attends all BEO meetings and maintains a correct function schedule calendar.
  8. Maintains communications between all staff concerning scheduling of food service employees.
  9. Follows correct policy and procedure, disciplinary actions and schedules employee meetings ensuring the consistent improvement of employee incentive and moral.
  10. Responsible for menu creation, organization and planning, ordering and product control.
  11. Maintains the highest quality standards for our guests and employees.
  12. Maintains knowledge of all events in the property as a whole.
  13. Attends and/or facilitates all mandatory meetings and training.
  14. Maintains confidentiality at all times.
  15. Is sensitive to Native American Culture.
  16. Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations.
  17. Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe.
  18. Performs other duties as assigned.

 

 
Position Requirements

KNOWLEDGE, SKILLS, AND ABILITIES:

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

POSITION REQUIREMENTS:

  1. Experience managing multi-level departments
  2. Knowledge of food quality standards
  3. Knowledge of food cost, inventory and budgeting
  4. Buffet, full service, catering and room service experience
  5. Excellent communication skills
  6. Ability to work independently
  7. Knowledge of federal and state sanitation guidelines.

PHYSICAL REQUIREMENTS:

  1. Physically capable of remaining on feet for long periods of time.
  2. Subject to internal working conditions, including a smoking environment.
  3. Must be able to lift up to 50 lbs.


EDUCATION AND SKILLS

Education Required: High School Diploma or General Education Equivalency (GED) with some culinary or management coursework.

Education Preferred: Culinary degree or Associates degree in Management

Experience: Minimum of three years of progressively responsible supervisory experience in a professional kitchen environment

Computer Skills: good computer skills required

Certificates & Licenses: Must meet Tribal/State compact licensing requirements, pass criminal background check and submit to drug testing.
