Description

The Assistant Kitchen Manager will ensure compliance with health & safety standard, plan and provide nutritious meals/ specials under the guidance of Kitchen Manager. The Assistant Kitchen Manager has overall responsibility for all facets of the cook team in the kitchen they are assigned to. This is a 'hands on' job, working with the culinary staff in his/her departments as well as other projects, daily guest interactions, and special requests from guests. Responsibilities are broad with assisting with developing menus, staff training, monitoring food purchases, labor cost controls and recipe development. All Food Service falls under your supervision. Audit and Maintain highest professional food quality, presentations and sanitation standards.

Assistant Kitchen Manger will assist with building, retaining, cross training, and lead the team of culinary professionals. Edgewood Culinary Team Goals are to satisfy our guests/employee's and exceed guest expectations regarding food quality, and consistency. Work daily with the Kitchen manger / Executive Chefs Team on selecting, hiring and retaining personnel within the culinary department. Train, develop and manage the staff within this department. Ensure Staff training, and development continues daily. Tasting and supervising all areas from a global point and to maximize the highest quality is produce and served. Monitor business forecasts and adjust scheduling if needed based on business levels. (i.e. early outs or staff flexing). This position will expect daily switch over execution and line checks for accuracy and taste profiles.

Position Requirements
  • High energy, self-starter, organized, flexible
  • Proven management and leadership ability
  • Basic knowledge of Word, Excel, Microsoft Office and other technology for the completion of specified job duties
  • Food Safety and other applicable Sanitation Certification
  • Ability to communicate on the telephone
  • Ability to read, write, type, and use a computer
  • Ability to complete tasks with numerous interruptions
  • Ability to stand for long periods of time
  • Ability to bend, lift and carry up to 50 pounds
  • Available to work varied shifts when needed, including weekends, holidays, and nights.
