We are currently looking for an experienced, Manager for our fine dining restaurant Polaris. The Polaris Manager: Supervises all aspects of food and beverage service in Polaris, as well as service in Cosmos Bar. This includes personnel, dining room and bar set-up and break down. Supervises, trains and evaluates subordinates. In conjunction with the Polaris Restaurant Manager, provides performance counseling as necessary, up to and including termination. Effectively schedules staff to operate Polaris and Cosmos Bar for daily services. Utilizes computer program to edit time punches and meal breaks necessary to complete payroll. Runs payroll reports. Interviews applicants and participates in hiring decisions. Communicates with members directly and through the service staff to ensure member satisfaction. Develops strong business relationships with members to ensure repeat business. Develops and maintains policies and procedures for Polaris and the Cosmos Bar to ensure consistent, high quality service standards that fulfill member expectations, increase revenues and encourage repeat patronage. Ensures that Polaris and the Cosmos Bar facilities and equipment are in good condition and coordinates necessary maintenance. Monitors restaurant and bar inventories and reorders supplies as needed. Trains the staff on cash handling and check out procedures. Follows up on any bank or turn in shortages. Operates a computerized point of sale system and troubleshoots system errors. Updates system with new menu items and/or changes. Inspects daily restaurant paperwork as well as tips out servers. Ensures that shift summary reports are completed and initialed by management. Communicates with the Polaris Restaurant Manager on a daily basis as well as maintains effective communication with other department managers to facilitate planning for daily operations and special events. Communicates consistently and effectively with the Executive Chef and kitchen personnel regarding various issues such as menu updates, daily specials, reservations and service staff changes The Idea Candidate Has: Minimum four years fine dining service experience and previous private club background preferred. Two years management experience preferred. A thorough knowledge of fine dining and private club industry standards and etiquette at they relate to food and wine service preferred. A thorough knowledge of food preparation techniques, terminology and ingredients as well as the ability to effectively communicate this knowledge to others preferred.
