Under the direction of the Executive Chef the FSTC Sous Chef is responsible for overseeing and coordinating the daily production assigned to the FSTC kitchen as well as providing the manual labor associated with the essential duties and responsibilities within the scope of work. The Sous Chef will provide direction and support to the staff, and volunteers. This person will serve as first point of contact for daily tasks and problem solving.

September - December the Sous Chef will be responsible for all culinary aspects of Opportunity Village's Magical Forest event. This includes ordering supplies, scheduling and stewarding employees and providing excellent customer service and food service delivery through the duration of the Magical Forest season.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  1. Supervise, provide labor and work alongside the staff as a team to ensure the day to day operations is compliant with the assigned kitchen production work.
  2. Lead, mentor and train the individuals served in the FSTC program and Magical Forest.
  3. Mentor, train and conduct departmental new hire orientation for new staff and individuals served.
  4. Maintain training schedules for all staff and prepare documentation for compliance.
  5. Designate shift and area work assignments in accordance with precedence.
  6. Ensure the menu for the Magical Forest is accurate, order all supplies for the Magical Forest culinary operations.
  7. Support staff in regard to correction of behavioral and performance issues as well as supportive services for the individuals served such as assistance with hygiene, meals and transportation.
  8. Provide Executive Chef with information regarding staff performance or any issues or concerns to assist in evaluations and corrective action.
  9. Ensure proper documentation is complete.
  10. Maintain proper food holding procedures.
  11. Ensure employees are compliance with the Department of Labor regulations.
  12. Ensure that changes to scope of work, methods, materials, or environment that can impact standards are addressed immediately and standards are reviewed and revised as needed.
  13. Administer Time Logger Program accurately and maintain attendance records.
  14. Perform other duties as assigned.

SKILLS REQUIRED

  • Ability to communicate effectively with individuals, co-workers and supervisors (verbal and written).
  • Ability to care, respond and work with individuals with developmental disabilities.
  • Ability to evaluate emergency situations and prioritize work load in order to meet strict deadlines.
  • Must encompass professional demeanor.
  • Ability to define problems and draw valid conclusions.
  • Ability to interpret instructions, gain knowledge and have initiative.
  • Must possess social discernment to assess and understand other’s reactions and behaviors.
  • Must be able to work flexible hours along with weekends and holidays for special events.
  • Ability to stand for long periods of time.
  • Must have a working knowledge of the Southern Nevada Health District policies and procedures.

EDUCATION AND EXPERIENCE

  • Required: High School Diploma or equivalent and six (6) months verifiable work experience in the Food Service industry.
  • Required: A Southern Nevada Health Card
  • Required: At least 5 years’ experience working in a high volume kitchen environment
  • Preferred: Experience working with individuals with disabilities.

  • Manual dexterity to operate office equipment and examine documents, records and files.
