Under the direction of the Executive Chef the FSTC Sous Chef is responsible for overseeing and coordinating the daily production assigned to the kitchen as well as providing the manual labor associated with the essential duties and responsibilities within the scope of work. The Sous Chef will provide direction and support to the staff, and volunteers. This person will serve as first point of contact for daily tasks and problem solving.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  1. Supervise, provide manual labor and work alongside the staff as a team to ensure the day to day operations is compliant with the assigned kitchen production work.
  2. Lead, mentor and train the individuals served in the Food Service Training Center program.
  3. Mentor, train and conduct departmental new hire orientation for new staff and individuals served.
  4. Maintain training schedules for all staff and prepare documentation for compliance.
  5. Designate shift and area work assignments in accordance with precedence.
  6. Support staff in regard to correction of behavioral and performance issues as well as supportive services for the individuals served such as assistance with hygiene, meals and transportation.
  7. Provide Executive Chef with information regarding staff performance or any issues or concerns to assist in evaluations and corrective action.
  8. Ensure proper documentation is complete (i.e. ID notes, incident reports).
  9. Maintain proper food holding procedures.
  10. Ensure employees are compliance with the Department of Labor regulations.
  11. Ensure that changes to scope of work, methods, materials, or environment that can impact standards are addressed immediately and standards are reviewed and revised as needed.
  12. Administer Time Logger Program accurately and maintain attendance records.
  13. Perform other duties as assigned.

 
Position Requirements

SKILLS REQUIRED

  • Excellent customer service and communication skills.
  • Ability to read, write and understand English.
  • Ability to develop and maintain a cohesive team.
  • Ability to read, analyze and interpret written instructions.
  • Ability to communicate, respond to inquiries and interpret instructions from management, contract representatives, staff personnel and workers with disabilities.
  • Ability to define problems, collection of data, establishes facts and draw valid conclusions.
  • Ability to perform basic mathematical calculations and count/exchange money.
  • Ability to multi-task.
  • Computer literate.
  • Must be able to work flexible hours along with weekends and holidays for special events.
  • Must have a working knowledge of the Southern Nevada Health District policies and procedures.

EDUCATION AND EXPERIENCE

  • Required: High School diploma or equivalent and two (2) years verifiable work experience in the Food Service industry in a supervisory role.
  • Required: Valid Southern Nevada Health Card and the ability to obtain a Serve-Safe certificate within six (6) months of employment.
  • Required: Valid Driver License and a clean driving record and must meet company insurance requirements to be able to drive a company vehicle. Must complete and pass the Smith’s Driving Training course administered by Opportunity Village.
  • Required: Current Cardiopulmonary Resuscitation (CPR) and First Aid Certification is required or the ability to supply certification within 30 days of hire.
  • Required: 5 years’ experience working in a high volume kitchen.

  • Manual dexterity to operate office equipment and examine documents, records and files.
