Position Requirements

MINIMUM QUALIFICATIONS:

  1. Culinary degree/certificate plus three (3) years of culinary supervisory experience in an upscale Restaurant hotel.
  2. High School Diploma or GED.
  3. Flexible schedule: able to work various shifts, weekends and holidays.
  4. Effective communications skills – verbally and written, able to provide instructions, respond to questions using English, and have exceptional interpersonal skills and abilities.
  5. Physically fit - able to stand and/or walk for long periods; able to perform repetitive motions with arms, wrists, hands and fingers; able to lift and maneuver 50lbs.
  6. Must possess or obtain a Food Handler Certification within 30 days of hire, and obtain Serv-Safe Training within 6 months.
  7. Exhibits a professional demeanor through appearance and by maintaining a positive attitude toward all employees and guests.
  8. Computer literate with Microsoft Word, Excel and Outlook experience.
  9. Requires a High Security Gaming License.
  10. Must be at least 21 years of age.

PREFERRED QUALIFICATIONS:

  1. Three (3) years of Supervisory experience in a 4 Diamond/Star rated Restaurant/Hotel.
  2. Prior experience with POS Systems, Inventory Tracking and Multi-Outlet Operations.

 
Description

JOB SUMMARY

As a Working Chef, they will manage operation of the Plateau kitchen under the direction of the Executive Chef. High level of creativity, reliability and self-motivation, and a goal oriented mentality. High level of working knowledge of all kitchen equipment, operations, sanitation, inventory and extensive culinary experience. Will be a part of future planning, budgets, building new training programs, staff retention/hiring. Take part in community activities with schools and fundraisers.

ESSENTIAL JOB FUNCTIONS:

  1. Manages staff according to business levels and anticipates business for future needs to ensure smooth service, transitions and customer satisfaction.
  2. Daily supervision of staff, hiring of staff, performance reviews, counseling, awards, training/coaching, operational orientation, staff development and scheduling and recommended disciplinary action as instructed by Executive Chef.
  3. Assists on special projects as assigned by the Executive Chef, banqueting, menu development, costing, food purchasing, and EDR food quality.
  4. Assist in other areas that have an opportunity or to cover management voids. Is expected to recommend and implement appropriate changes to remedy management or customer concerns.
  5. Creates prep lists, chef features, menus and recipes for outlets. Keeps track of BEO's and special events.
  6. Works closely with Warehouse and Food Buyer to ensure proper items are ordered and received.
  7. Works to ensure accuracy of Eatec Inventory System.
  8. Trains new hires making sure that all points in Wildhorse Resort & Culinary Training Manual are completed and all necessary classes.
  9. Assists with Inventories and keeps Wildhorse pricing and financial information confidential.
  10. Promotes a clean, safe and healthy work environment for employees and guest. Addresses critical needs immediately and professionally.
  11. Covers cooks shifts and schedule gaps as needed. Is competent in all areas of kitchen.
  12. Complies with health regulations, state and federal regulatory laws, Employee Handbook, department policy and procedures, safety codes, etc.
  13. Ensure that operation of equipment, tools, and materials are handled in a safe manner and in accordance with manufacturer’s guidelines.
  14. Promote external/internal guest service standards through courteous and respectful behavior.
  15. Assist in managing and maintaining budgeted food cost and labor costs.
  16. Works to make sure FIFO, labeling, dating and storage are being done and holding team accountable.
  17. Ensures recipe, checklists, and production books are current and in use to ensure consistent Product that exceeds guests expectations.
  18. Supports F&B and the Wildhorse common purpose through daily actions.

 
Salary $47K-$65K Salary
