Description

Job Summary: Can prepare soups, salads, sandwiches, and entrees from recipes; develops and uses recipes that emphasize natural foods and vegetables. Can also package, and receive products made by or brought into the Co-op Kitchen. Fulfills required daily production duties of assigned production positions.

Attendance Requirements: Flexible hours, early morning, weekend and evening duty seven days a week.

Work Environment: All area's of Co-op Kitchen.

Equipment: Knives, pallet jack, slicer, Gas range, microwave, food processor, Steamers, tilt skillet, grill, bermixer, automated and manual prep machines, other equipment

Quality Standards: Preparation: Prepares recipes in allotted time. Finishes production list and cleaning schedule for scheduled shift.

Product loss: No more than one recipe batch lost per month.

Cleanliness: Keeps regular cleaning schedule for all hot line equipment. Follows sanitation guidelines, SOP's and HACCP principles as directed by the Executive Chef and/or Sous Chef.

Ensures follow through on production lists and cleaning schedules.

     Job Duties and Responsibilities:

* Accurately and efficiently prepares soups, salads, sauces, side dishes, specials and entrees and all other recipes required as directed.

* May develop, adapt and document recipes that emphasize natural foods and vegetables

* Can weigh, wrap or package deli prepared foods, and affixes sticker showing price and weight.

* Cleans assigned areas to maintain safe and sanitary conditions. Cleans shelves, bins, tables, coolers and floor on a regularly scheduled basis. Washes hands frequently and uses flexible gloves when handling all ready-to-eat foods.

* Records recipe yields and takes daily inventory ensuring FIFO.

* Cooks all hot foods to appropriate temperature and chills all hot/cooked product to 41F or less within four hours.

* Notifies Executive Chef and/or Sous Chef about missing tags and PLU needs

* Counts items coming into Commissary to reconcile physical product to invoiced product.

* Maintains high in-stock levels without excessive back-stock.

* May re-order supplies and product from suppliers based on inventory requirements.

Position Requirements

Qualifications:  High School or equivalent.  Must have a minimum of 3 years restaurant experience or equivalent.                      

Must be able to lift 60 lbs comfortably on a regular basis.  Must be a team player.
