TITLE: Management Internship / Externship

DEPARTMENT: Operations

REPORTS TO: General Manager

STATUS: Hourly Level


Many employers are now looking for employees with previous work experience. New employees with prior experience have shown a greater ability to succeed in the new work environment. Practical experience helps you prepare and better understand the skills necessary to succeed in this challenging field.

Hoss's and Marzoni’s have developed an Internship/Externship Program that helps you gain real world experience of Restaurant Management. Our program is a 400-hour-base program that can be tailored to meet each student's needs as well as college requirements.

The program takes the individual through the same Learner Controlled Program that is used to train our Assistant Managers. The program gives you training and experience in all the operational and management areas through the restaurant. Management training will include shift running, opening and closing management duties, and inventory and payroll reporting.

During training, you will be working with an experienced staff that will help you learn the operations of Hoss's and/or Marzoni’s. You will receive weekly feedback as well as being tested through the areas to insure your knowledge.

The hourly rate for the Internship/Externship is based on your experience. This rate will be negotiated during the interview process.

Hoss's and Marzoni’s uses the internship program to help you learn, but also helps us find potential new managers. At the end of the Internship/Externship Program an offer of employment may be rendered based on your performance and position availability.


JOB PURPOSE: Gain the knowledge necessary to contribute to the Successful Operation of a Hoss’s or Marzoni's Restaurant

By directing shifts to deliver The Hoss's and/or Marzoni's Way and guarantee guest satisfaction


  1. Directs Successful Shifts

By requiring execution of The Hoss's and/or Marzoni's Way procedures and delivery of Hoss’pitality at all times.

  1. Develops Restaurant Staff

By training and motivating crew members evaluating their performance as needed.

  1. Contributes to Restaurant Financial Results

By controlling waste and optimizing productivity in the course of daily business.

      4. Meets Administrative Requirements

By accurately completing accounting and reporting functions as assigned by the general manager.

  1. Meets Hoss’s and/or Marzoni's Standards of Property Management

By driving effective cleaning and maintenance programs.

      6. Maintains Technical and Professional Knowledge

By ongoing exposure to new information and resources and fulfilling continual educational requirements.

      7. Demonstrates Community Support

By active involvement in local organizations which foster community growth and improvement.

  1. Improves the Hoss and/or Marzoni's Organization and Concept

By actively participating in all available feedback and information gathering processes.


Position Requirements


Required: High School Diploma or equivalent
Preferred: Associate or Bachelor’s Degree in Hotel, Restaurant, and Institutional Management




  • Previous Restaurant experience
  • Previous Management experience



  • Must have excellent communication skills both verbal and written, good listening and speaking skills
  • Must have excellent employee-relation skills
  • Must have excellent organizational, leadership, and management skills
  • Must have the ability to plan, meet deadlines, and manage multiple priorities
  • Must have the ability to analyze problems and make decisions
  • Must have the ability to acquire, evaluate, and analyze data, organize and maintain files
  • Tasting – ability of tongue taste buds to distinguish between and among flavors, spices, temperature and mouth feel of food and beverages
  • May be required to perform various food service jobs in the course of the training and evaluation process
  • Must have the ability to operate office machinery including computers, printers, etc.
  • Must be able to make decisions under stressful situations
  • Must be Food Service Sanitation Certified
  • Must be CPR Certified


Physical Demands

      • Must be able to work in a loud, fast-paced, and hectic environment
      • Must be able to lift and carry objects weighing up to 50 pounds
      • Must be able to bend and stoop
      • Very infrequent driving may be required


      • Must be able to stand for long periods of time
      • Subject to wet floor, temperature extremes, and noise
