Description

Under the supervision of the Pitmaster and management the Pit cook is responsible for the production and quality of our pork and chicken for and during service hours. The Pit cook must be the duty expert in the use of our products and equipment. This position requires a great deal of knowledge on utilizing our traditional pit cookers and must have the ability to master the "low and slow" method of cooking using charcoal and wood. This position will be required to work shifts ranging from daytime to overnight for production the next business day. This position will also be required to work company events in which the Pitmaster determines additional hands will be required for production at the event. 

 
Position Requirements
  • Must be able to lift 80 to 90 lbs at a time consistently through shift as required for cooking hogs
  • Must be able to prepare food and ensure quality of service under the supervision of the Pitmaster and to the specs desired for our BBQ being served to guests.
  • Follow all recipes, safety, and sanitation standards
  • Regulate production according to business needs and estbalished PARs for restaurants
  • Build and maintain fires in pits overnight and during service
  • Communicate with line to keep product stocked during service
  • Perform other related duties
